How can I remove the double colons :: appear before and after a gallery caption photo?

And how can I have a gallery caption to use spaces between words and caps on certain words?

Go to your "edit account" page -- the option is there, but note it is a per account setting not a per gallery setting:

Go to edit gallery and change the Title field.
