Changing words on header bar....

1. Remove the "all galleries" tab from my homepage? The link doesn't work there anyway because all my galleries are thumbnailed on the homepage...I do want it to remain on my subsequent pages though.
2. Change the wording of the other linked tabs? For example, can I make the 'profile" tab say "about us"? or the "recent" tab say "Newly Added Photos" or something to that effect? If so, how do I do it so that I effect all of my pages?
