Correct English

"Galleries with less than four photos are not listed."

The correct English is:

"Galleries with fewer than four photos are not listed."

I don't know about the English especially as the owners are American and they have a strange way of writing English but in any case I have found the galleries with 1 picture also show up

i don't know about the English either because i'm American, but i'm unconvinced about the incorrectness of "less than" in this case.
seems to me it's a commonly used conditional which applies to numbers.

however, regardless of the correctness of the grammar, the statement is in fact incorrect as pointed out by ilanphoto since the four photo limit no longer applies. (this was changed a while ago because it made the query much faster)

Less refers to quantity and fewer to numbers.
