Filter Help

I am just a beginner and am wondering what filters are worthwhile. Specifically, when taking mountain landscapes I have found them to be hazy, does a uv filter really make that much of a difference. Also wondering if a polarizing filter is worthwhile to purchase for lakes, rivers... Any suggestions would be much appreciated.

Also, since I'm asking I have been told to shoot in RAW but when I ask why they say just do it, it's better. I do not play with my photos except to correct the exposure every now and then. Without getting too technical can anyone tell me why RAW is the way to go???
