Thank you to everyone who offered suggestions in this thread & of course to djwixx for starting it! I followed some of the suggestions & took some shots yesterday that I think are much better & sharper than what I have been taking.

I've been take a couple of thousand shots with my Nikon D70s and this are my final custom settings:
sharpening: +2
tone compensation: -2
color mode: Ia
saturation: 0
hue adjustment auto: -3

Nikon D70s sensor had some sensor problems in my opinion:
-too much contrast (low details in white snow, white bride dress, etc)
-problems with red and white channel (possible because of my lenses). The red and white are represented in pictures two bright and vivids...)
-low sharpness

Because of this aspects I don't recommend using Nikon D70s for wedding photography...
