As I was browsing through the favorites I came across a thumbnail of an individual with a chainsaw carving a human figure out of wood. Then when I clicked on the thumbnail, it opened to a gallery of the same man, but instead of the image represented by the thumbnail I clicked, there was the same individual carving an owl, and the image I clicked on was nowhere to be found.

How do you get an entirely different image to represent your gallery that is not even posted?

Oh it's easy :D

You simply upload the one you want to be the representative image, but make it NOT publicly viewable. That way, to the outside observer, it doesn't show in the gallery, but it can be used as the rep thumb for the gallery.
