I'm using PTGui to stitch http://www.ptgui.com/
Works great and easy to use.

I'm taking the shots using a Nodal Ninjoa pano head http://www.nodalninja.com/
A pano tool is essential if you are going to include foreground elements, otherwise paralax will make the stitch nearly impossible.
