B&W photo with a color focal point

I am wondering how the fade the background of a photo to B&W and keep an accent point in color. What's the term used for the post-process? Just a newbie here...

Here's how I would do that is PhotoShop. First, in color mode, select the portion of the photo you want to keep in color. When you have made the selection, save it so you can use it again, and then copy the selection.

Then change the mode to B&W. Then change it back to RGB. All color will be gone. Then Load the selection you saved and Paste the selection into the selected area. You then have the color you wanted with a B&W background.

I imagine that there would be similar controls in other image editing software

If you have Photoshop then there is an action to do this at http://www.1clickactions.com The action is called SelectiveColor (I think). I think there are many ways to do it but this works and is easy to use.
