EXIF data

I am doing a university project and I am looking for some information about EXIF data tags for images.
I would like to add GPS data to an image from a GPS receiver and I also have an orientation sensor which will give me the camera orientation with respect to the earth. The orientation is in three axis and 360 degrees.
Is it possible for me to tag it to the image?
Also if I capture an image with a web camera and save it as a jpeg can I change it to an EXIF image to take advantage of the tagging EXIF provides?
